Abstract
This research explores applying the food industry's use of big data and AI, highlighting both the unprecedented opportunities and potential challenges. It emphasizes the necessity of comprehensive legal frameworks to address ethical and human rights implications, ensure data privacy, and promote transparency in algorithmic decision-making . The study advocates for incentivizing sustainable technologies and practices, strengthening access to justice, and establishing international AI ethics guidelines. Furthermore, it examines the adaptation of existing international agreements and the potential need for new legal instruments to govern AI use in cross-border food trade. Collaboration among governments, businesses, civil society, and researchers is deemed crucial for accessing nutritious food for all. The research concludes by reiterating the value of a human-centered method to innovation in the food sector, calling for collaborative efforts to construct food systems that are less biassed, stronger, and less harmful to the environment.
